• 500 gr. of honey.
  • ½ litter of water.
  • 500 gr. of crushed and toasted almonds.
  • 1 cinnamon stick.
  • Lemon peel.
  • 8 yolks.


First of all, you have to make syrup with water, the cinnamon stick and the lemon peel. Let it reduce until it gets strongly stringy.
Remove the cinnamon and the lemon peel. Add the crushed almonds. Leave it for 25 minutes.
Remove from heat and when it is cool, add the yolks. Then, heat it again for 5 minutes.
Remove it and pour it in a dish to cool completely.
Dilute the honey in a small saucepan and continue with the rest of the directions. If you prefer it with gofio, add it at the last minute, then add the yolks and heat it again.
